Feta Cheese and Aduki Bean Salad |

Ingredients
125g/5oz aduki beans 2 tbsp olive oil 1 red onion, thinly sliced 1 clove garlic, crushed ½ x 200g pack feta cheese,crumbled 2 x 120g packs herb salad freshly ground black pepper
Place the soaked beans in a pan, cover with water and bring to the boil, reduce the heat and simmer until the beans are tender. Drain and refresh.
Heat the olive oil in a frying pan and fry the onion for 3-4 minutes, add the garlic and feta and cook for a further minute.
Place the salad into a bowl, add the beans and balsamic vinegar. Pour over the onions and cheese. Toss together, add seasoning to taste and serve immediately with some croutons if desired.
