    Pasta with asparagus and pancetta

 
Pasta with asparagus and pancetta Preparation time: 10 minutes
Cooking time: 15 minutes

  Ingredients
250g/9oz asparagus, tough ends trimmed
250g/9oz dried pasta shapes
2 tbsp olive oil
1 small onion, chopped
125/4oz pancetta, cut into strips
1x15g pack fresh chives, snipped
Salt and freshly ground black pepper
50g/2oz freshly grated Parmesan



Cook the asparagus in a large pan of boiling water for 3-4mins, then remove, drain and reserve the cooking water. Cook pasta in the same water according to instructions.

Meanwhile, fry the onion and the pancetta in the olive oil for about 5-7mins. Cut the asparagus in half and then in half lengthways, add to the pan and cook for another 2 mins. Add a ladleful of pasta cooking water and turn up the heat, and cook fiercely until the liquid almost evaporates.

When cooked, drain the pasta then toss it with the asparagus and pancetta mixture and the chives.

Season and stir in half the cheese. Serve with the remaining grated cheese.
