    Beef Samosas

 
Beef Samosas Preparation time: 10 minutes
Cooking time: 25 minutes
Serves: 20
Calories: 100 (per serving)

  Ingredients
225g/8oz lean minced beef
1 onion, finely chopped
2tbsp curry paste
1 carrot, finely chopped
1 potato, peeled and chopped
50g/2oz frozen peas, thawed
Salt & Pepper
10 sheets of filo pastry
25/1oz margarine, melted.


ln a saucepan, dry fry the mince and onion until browned. Add the curry paste and cook for two minutes. Stir in the carrot, potato, peas and seasoning and cook for a further two to three minutes. Allow to cool.

Cut the filo pastry in half to form rectangles approximately 9cm (3½") wide. Brush the edges with margarine. Place a heaped teaspoon of the filling onto the pastry. Fold the corner over to form a triangle and continue folding, retaining the triangular shape. Repeat using the remaining ingredients.

Place on a baking tray, brush with margarine and bake in a preheated oven for 15-20 minutes, until golden.
