    Rice with Tuna

 
Rice with Tuna Preparation time: 5 minutes
Cooking time: 15 minutes
Serves: 2
Calories: 402 (per serving)

  Ingredients
125g/4oz Easy Cook wholegrain rice
1 tbsp vegetable oil
125g/4oz frozen peas, thawed
200g tin tuna in brine drained
1 ripe tomato, deseeded and cut into thin wedges
1-2 tbsp soy sauce

Cook the rice according to instructions and drain.

Heat the oil in a large frying pan or wok and stir-fry the rice over a high heat for 1-2 minutes until the grains are coated.

Add the peas, drained tuna and tomato wedges and stir fry for a further two minutes until cooked.

Stir in the soy sauce and parsley and heat through. Serve immediately.
