    Tomato and Green Bean Risotto

 
Tomato and Green Bean Risotto Preparation time: 10 minutes
Cooking time: 25 minutes

  Ingredients
Left-over Christmas Turkey can easily be substituted for the chicken shown here.

Ingredients

1 Onion, chopped
175g/6oz Risotto Rice
600ml/1pint chicken stock
175g/6oz Cooked Chicken, cubed
75g/3oz French Beans
400g tin of chopped tomatoes
2 tbsp Lemon Juice
Salt and Pepper

Fry the onion gently in a tsp of oil in a large frying pan for 5 minutes. Add the rice and the stock. Chop the beans in half and add to the rice with the chicken, tomatoes and lemon juice. Season to taste. Cook gently for 20 minutes or until the rice is creamy.
