Ingredients
225g/8oz self raising flour 1 level tsp baking powder 50g/2oz polyunsaturated margarine 3 level tbsp Splenda sweetener 50g/2oz sultanas Finely grated zest of one lemon 150ml/¼pt skimmed milk, one tablespoon reserved Preheat the oven to 220ºC/430ºF/Gas Mark 7.
Line a baking sheet with nonstick baking parchment.
Sift the flour and baking powder into a large bowl. Add the margarine and cut through with a round-ended knife. Using finger tips, rub the margarine into the flour until it resembles breadcrumbs. Stir in the Splenda, sultanas and lemon zest.
Mix in the milk to form a soft dough. Knead lightly to combine. Lightly flour the work surface then roll or press out to approximately 2cm (¾") thick. Using a 5cm (2") fluted cutter, make ten rounds.
Transfer to the baking sheet,brush with the reserved milk and bake for 10-12 minutes until golden and risen.
Transfer to a wire rack to cool.
