    Lentil and Turkey Soup

 
Lentil and Turkey Soup Preparation time: 10 minutes
Cooking time: 45 minutes
Serves: 8
Calories: 250 (per serving)
Fat: 5 g (per serving)

   
 
   
  Ingredients
Large Can of Lentils
2 ½ litres water
1 medium onion, chopped
2 stalks carrots, chopped
2 stalks celery
2 medium red potatoes, cut in chunks
2 bay leaves
1/2 tsp dried sage
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp black pepper
230g/8oz left-over turkey or chicken cut into chunks


Combine all ingredients except turkey in a large soup pot.

Bring to a boil, and turn down to simmer. Cook, covered for about 30 minutes.

Add turkey pieces and cook for about 15 minutes more, until the flavours have mingled and the turkey meat is thoroughly heated through.
