    LAMB KEBABS

 
LAMB KEBABS Preparation time: 10 mins
Cooking time: 15 mins
Serves: 4
Calories: 308 (per serving)

  Ingredients
1 large leek
4 lamb chump steaks (about 150g/5oz each)
2 large mushrooms
2 medium courgettes
50g (2oz) stuffed olives
3 tomatoes
4 spring onions
1 clove of garlic
½ tsp ground coriander ½ tsp cumin
½ tsp seasoning
Vegetable oil


Cut 8 x 2.5cm (1in) slices from the leek and put in a pan of cold water. Bring to the boil and drain.
Trim the fat from the lamb steaks and cut into four. Quarter the mushrooms. Cut the courgettes in half lengthways then cut each half into four. Thread everything on to 8 skewers and season well. Brush with vegetable oil and grill for 10-15 mins, turning occasionally.
Chop the stuffed olives, tomatoes, spring onions and garlic. Mix with ground coriander, cumin and season. Serve with cooked rice
