Ingredients
500g/I Ib 4oz Cod 2 tbsp fresh coriander 1 red chilli, chopped 2 tbsp fish sauce 4 Kaffir lime leaves 3 spring onions, roughly chopped 1 tsp brown sugar 1 egg white salt and pepper 40g/2oz green bean, thinly sliced 10 kaffir lime leaves, soaked in water for 10 minutes 1 tbsp olive oil
Place all the ingredients, except the green beans, 10 soaked lime leaves and oil, into a food processor. Mix well until combined.
Stir in the beans and form the mixture into small balls. Thread two balls onto wooden skewers, with a lime leaf in between.
Brush with olive oil
Place under a hot grill and cook for 3 – 4 minutes on each side.
