    Vegetables With a Difference

  Ingredients
Rosemary Carrots

Serves: 8

Calories per portion: 115
Fat grams per portion: 3.5g

Preparation time: 5 minutes
Cooking time: 30 minutes

2 Kg Carrots, peeled and cubed
4 tbsp fresh chopped rosemary or 2 tsp dried rosemary
8 garlic cloves, peeled and crushed
2 tbsp olive oil


Mix together the rosemary and garlic with the olive oil. Place the carrots in a roasting tin and pour over the oil mix. Toss together and roast in 200C, 400F, gas mark 6 oven for 30 minutes.

Chilli and Ginger Broccoli

Serves: 8

Calories per portion: 105
Fat grams per portion: 3.1g

Preparation time: 5 minutes
Cooking time: 5 minutes

1 Kg broccoli, broken into florets
2 red chillies, deseeded and finely chopped
2 tbsp finely shredded root ginger
2 tbsp sesame oil
2 tbsp soy sauce

Cook the broccoli in boiling water, drain. Refresh in cold water and drain again. Stir fry the chillies and ginger in the oil for one minute, add the broccoli and cook for a further 4 minutes. Stir in the soy sauce.
