Ingredients
Preparation time: 10 minutes plus overnight chilling time. Cooking time:
2 boneless chicken breasts, skinned 2 tbsp soy sauce 1 tsp Demerara sugar 2 tbsp dry sherry 1 tsp finely chopped fresh root ginger 1 clove garlic crushed oil for brushing shredded lettuce 4 spring onions, chopped
Cut the chicken into cubes and place in a dish. Combine the soy sauce, sugar, sherry, ginger and garlic, pour over the chicken and mix together. Cover and chill overnight.
Thread the chicken onto 8 wooden cocktail sticks. Place on a microwave rack over a dish, brush with oil and cook on high for 6 minutes, turning halfway through cooking. (These can be grilled over a medium grill).
Serve on a bed of shredded lettuce and onion.
