    VEGETABLE SOUP

 
VEGETABLE SOUP Preparation time: 20 minutes
Cooking time: 3 hours
Serves: 6
Calories: 140 (per serving)

  Ingredients
225g/8oz carrots, peeled and chopped
225g/8oz celeriac, peeled and chopped
225g/8oz leeks, washed and chopped
225g/8oz swede, peeled and chopped
1 small onion, peeled and chopped
1.5 litres/2 ½ pints vegetable stock
3 bay leaves
salt and pepper


Place all the ingredients into a large casserole dish and bring it up to a gentle simmer. Put the lid on and place in the oven on gas mark 1, 275F, 140C. Cook for 3 hours. Remove the bay leaves and liquidise the soup. Gently reheat and serve.
