Ingredients
450g/1Ib leeks, trimmed 450g/1Ib potatoes, peeled 50g/2oz butter 1.2litres/2pints chicken stock salt and pepper
Cut the leeks diagonally into 1.2cm/ ½ inch pieces and wash thoroughly under cold running water. Cut the potatoes into 2.5cm/1 inch pieces.
Melt the butter in a large pan, add the leeks and potatoes and cook over a medium heat for 5 - 10 minutes, stirring frequently until the leeks are soft.
Add the stock, salt and ground black pepper and bring to the boil. Cover and simmer for 30 minutes or until the potatoes are tender. Serve.
