Ingredients

450g of skinless, boneless chicken breasts cut into bite size pieces 1 Onion, chopped 1 Green pepper, seeded and chopped 100g mushrooms, sliced 1 clove garlic, crushed 2 x 400g chopped tomatoes 1 – 2 tbsp Slenda Granular, according to taste 3 tsp Oregano Salt and Pepper 100g sliced black olives
In a large frying pan sprayed with olive oil-flavoured spray, sauté the chicken, onion, pepper, mushrooms and garlic for 6 – 8 minutes, or until the chicken is evenly cooked. Stir in the tomatoes and mix well. Add the Splenda granular, oregano, olives, seasoning and mix well to combine. Lower the heat and simmer for 15-20 minutes until the sauce has thickened, stirring occasionally. Serve over pasta.
