Peppered Mackeral and Pasta Salad |

Ingredients
500g/18oz pasta shells 1 tbsp olive oil 3 large peppered smoked mackerel fillets, skinned and flaked 198g can of sweetcorn, drained 1 bunch of spring onions, trimmed and chopped 1 bunch of watercress, trimmed and large stalks removed
for the dressing 150g carton of natural yogurt 1 tbsp creamed horseradish salt & pepper
Cook the pasta shells in boiling water for 10 minutes, drain and cool quickly under cold water, drain again and tip into a bowl. Add the oil and stir. Add the mackerel, sweetcorn, spring onions and watercress. Toss gently to mix. For the dressing, mix together the yogurt and horseradish and season to taste. Spoon the dressing over the salad and toss to mix.
