Ingredients
450g/1Ib minced lamb 2 cloves of garlic, crushed 1 tsp cumin seeds 1 tsp ground coriander 1 red onion, sliced finely grated zest and juice of an orange 2tbsp soy sauce 1 orange, peeled and segmented salt & pepper snipped fresh chives to garnish
Heat a wok or large frying pan and add the lamb. Dry fry the lamb until browned, drain away any excess fat from wok. Add the garlic, cumin, coriander and onion to the wok and stir-fry for a further 5 minutes. Stir in the orange zest and juice and the soy sauce. Cover, and simmer for 15 minutes, stirring occasionally. Remove the lid and increase the heat, add the orange segments. Stir to mix. Season with salt & pepper and heat through for a further 2 minutes. Garnish with chives.
