    Oriental Chicken

 
Oriental Chicken Preparation time: 5 minutes
Cooking time: 10 minutes
Serves: 4
Calories: 275 (per serving)

  Ingredients
175g/6oz fresh ribbon noodles
8 salad onions
150g/5oz mushrooms
1 Red pepper
275g/10oz lean raw chicken, sliced into strips
15ml/1tbsp oil
160g jar of ready-prepared Sweet & Sour sauce
30ml/2tbsp crushed cashew nuts

Cook the noodles according to pack instructions, drain. Chop the onions, mushrooms and pepper into chunks. Heat the oil in a non-stick pan and add the chicken, cook for 4 minutes. Add the vegetables and cook for a further 3 minutes. Pour in the sauce and add the noodles, toss lightly and heat through. Sprinkle with the nuts.
