Ingredients
Okay I know these are nothing new and that slimmers have been using meringue nests with cream and fruit as a low calorie dessert for a long time, BUT here is a recipe if you fancy making the nests yourselves, they taste delicious.
5 Egg Whites 1 tsp vinegar 1 tsp cornflour 175g/7oz caster sugar 1/2 tsp vanilla essence
Beat the egg white with the vinegar and 1/2 tsp of the cornflour until they are stiff. Beat in the sugar, vanilla essence and remaining cornflour. Spoon or pipe the mixture into six 'nests', leaving a well in the centre, onto a greased and lined baking sheet. Bake in a very cool oven, 130C/Gas mark 1/2 for 1 - 1 1/2 hours.
These can be topped with half-fat aerosol cream or crème fraiche and any fruit such as raspberries, strawberries, passion fruit or mandarins,
