SPICY CHICKEN KEBABS Preparation time: 20 minutes

  Ingredients

Preparation time: 20 minutes plus 2 hours marinating

550g/16oz Chicken Livers
150g pot of low-fat natural yogurt
2 cloves of garlic
2.5cm/1” piece of root ginger, peeled
2 tsp paprika
1 tsp ground cumin
2 tomatoes, quartered
2 onions, peeled and quartered
1 green pepper, de-seeded and quartered
1 red pepper, de-seeded and quartered
juice of 1 lemon.

Rinse the livers in cold water and remove any threads or pieces of fat. Blend the yogurt, garlic, ginger and spices in a food processor. Marinate the livers in this mixture for 2 hours. Thread onto four skewers with the pieces of vegetables. Squeeze over the lemon juice and any remaining marinade. Place the kebabs under a hot grill for 10 minutes, turning frequently.
