Ingredients
This incredibly simple dish makes an impressive dessert served with crème fraiche. 150ml/ ¼ pt water Juice and rind of a small lemon ½ tsp ground ginger ½ tsp liquid sweetener 4 firm pears few toasted flaked almonds
Put the water, lemon juice and rind in a saucepan and bring to the boil. Simmer for 2 minutes. Remove the pan from the heat and add the ginger and sweetener. Peel the pears but leave whole with the stalks on. Place the pears in an ovenproof dish and pour over the liquid immediately to prevent discolouration. Cover with foil and bake in a moderate over 180C, 350F, Gas Mark 4, for 50 – 60 mins, basting frequently with the liquid. Remove from oven and decorate with the flaked almonds. This can be served hot or cold.
