    PRAWN CURRY WITH RICE

 
PRAWN CURRY WITH RICE Preparation time: 15 minutes
Cooking time: 25 minutes
Serves: 4

  Ingredients
115g/4oz Onion, chopped
2 cloves of garlic, crushed
115g/4oz red pepper, diced
175g/6oz courgettes, sliced
2tsp oil
2 tbsp plain flour
2 tbsp tomato puree
1 tbsp curry paste
2 tsp dried mixed herbs
2 x 425g cans chopped tomatoes
150ml/ ¼ pt boiling water
1 fish stock cube
salt & pepper
575g/1 ¼ Ib prawns
350g/12oz rice

Heat the oil in a non-stick pan and sauté the onion, garlic, pepper and courgettes for five minutes. Stir in the flour, puree, curry paste and herbs, mix well. Add the tomatoes with the water and stock cube, season to taste. Bring to boil and simmer covered for 10 minutes. Add the prawns and heat through. Serve with rice.
