Ingredients
225g/8oz pasta shapes 100g/4oz button mushrooms 25g/ 1oz light spread small can of tuna in brine 4 tablespoons of light mayonnaise 2 spring onions chopped 4 radish, sliced 2 tablespoons chopped parsley Salt and Pepper 4 large lettuce leaves 1 hard-boiled egg, chopped
Cook the pasta in boiling water for 10 minutes. Drain and rinse in boiling water. Slice the mushrooms thinly. Melt the spread in a small pan and toss the mushrooms in it. Mix the mushroom with the hot pasta and leave to cool. Drain the tuna and flake. Mix the tuna with the pasta, mayonnaise, spring onions, radish, parsley and season to taste. Line four individual dishes with lettuce leaf, fill with pasta mix. Sprinkle over chopped egg.
