    VEGETABLE SOUP

 
VEGETABLE SOUP Preparation time: 10 minutes
Cooking time: 45 minutes
Serves: 4
Calories: 10 (per serving)

  Ingredients
This soup contains few calories and fat and is ideal for eating in between meals as a snack.

Savoy Cabbage, shredded
2 Leeks, sliced
4 Carrots, sliced
2 Sticks of Celery, sliced
½ Swede, chopped
1 parsnip, chopped
2 Stock Cubes.
Salt & Pepper

Place all the vegetables into a large saucepan and completely cover with stock made from stock cubes. Bring to the boil and simmer for 45 minutes or until the vegetables are tender. Allow to cool and blend to a smooth consistency, season to taste.
