Ingredients
1 tbsp olive oil 1 large red onion, peeled and sliced 250g/12 oz chicken breasts, cut into strips 100g/4oz Frozen Asparagus 50g/2oz Frozen Mixed Peppers 1 tbsp mixed dried herbs Salt & Pepper 3 tbsp Orange Juice 1 tsp clear honey 150g/5oz ready made salad 50g/2oz pecan nuts, toasted
Heat the oil in a large frying pan and stir fry the onion for 2 minutes. Add the chicken and cook for a further 3 minutes. Add the asparagus and peppers and stir-fry for 3 minutes. Stir in the herbs and season to taste. Cook for a further 3 minutes. Pour in the orange juice and honey and cook for 2 minutes. Arrange the salad onto four plates, spoon over the chicken mixture and sprinkle over the pecan nuts.
